I finally purchased Coral M.2 Dual Edge and confirmed that it works with Udoo x86 using short M.2 slot used by Wifi module on Ubuntu 22.10.
I couldn't even find it in stock anymore :) It was sold out while I was waiting first couple of days for non-existent UDOO community to answer :(

Okay, installing nodejs v6 did the trick: https://www.ubuntuupdates.org/ppa/nodejs_6.x
nodejs bundled with bionic was too new for udoo node...
Already did before writing to the forum.
Anyway, after playing around did:
apt remove udoo-iot-cloud-client udoo-web-conf
