u-boot-2015.07 can be compiled and works fine. In 2015.10 version there will be small change to have only one bootloader for both dual and quad board.

Openelec is not using official Udoo kernel. That's why this things probably don't work. To upload/burn sketch just boot UDOObuntu.

You need to connect micro usb cable to get serial console. Then you stop u-boot and run commands there....
Hard to say because there are lot of VID's/PID's in it's kernel patch. But I'm sure kernel can be rebuild to support it.
